About the Role
We're looking for a highly skilled Japanese Specialty Chef to join our Airline Catering business at Sydney Airport on a full-time basis, planning and directing food preparation for Japanese airline client meals across Economy, Business and First Class.
Key Responsibilities
- Preparation and production of traditional Japanese cuisine (hot and cold) in commercial quantities
- Supervising kitchen staff and managing daily operational and production challenges
- Assisting the Executive Chef to plan, develop and cost multi-course menus and liaise with Japanese clients on requirements
- Monitoring compliance with recipe specifications, HACCP audits and Food Safety standards
- Managing labour, food costs, waste and shrinkage to budget
Essential Requirements
- Experience in modern and traditional Japanese cuisine and cooking methods
- Background in high-end Japanese Kaiseki or Omakase restaurants, cruise ships, luxury hotels or casinos
- Recognised qualifications in Commercial Cookery and Japanese food techniques
- Knowledge of ISO/HACCP/QSAI/Food Safety and OHS
- Prior airline or commercial catering experience
- Clear National Police Check required
