About the Role

dnata is seeking a highly skilled specialty chef trained in traditional and modern Asian cuisine to join its busy catering unit at Perth Airport on a full-time basis. As a skilled Chef, you will be responsible for planning and directing food preparation in the kitchens for the client's Asian focused Airline customer meals, working with a team of kitchen staff as well as managing your own cooking section, and assisting the Sous Chefs in charge of daily production to plan, develop and cost menus.

Key Responsibilities

  • Be experienced in wok based dishes, cooking methods, taste and quality
  • Preparation and production of traditional Asian style cuisines for Economy, Business class and First class passengers
  • Assisting the team to prepare over 10,000 hot & cold meals daily for customers
  • Stock control & minimizing food wastage
  • Cleaning & maintaining a hygienic work environment at all times
  • Strictly following menu specifications as well as all Australian Food Safety / HACCP, Work Health Safety & QSAI policies

Essential Requirements

  • Experience in modern and traditional styles of Japanese, Malay, Chinese, Thai or Singaporean cuisine highly regarded
  • Recognized qualifications in Commercial Cookery min Cert III and experience in authentic food techniques
  • Knowledge of wok handling, heat transfer and wok maintenance
  • Ability to work a 7-day rotating shift roster
  • Good written & verbal communication skills in English
  • Good organizational, time management skills and attention to detail
  • Experience in commercial catering or large-scale hotels highly regarded
  • Practiced budgeting and food cost on a large scale
  • A clear National Police Check, as this role is in the Aviation Services industry
